Day 1 | Hanoi: Arriving in Hanoi, we will take the time to adjust to the time change by having an introductory lesson of Vietnam, the history, culture, nature, and the cuisine we will be immersing ourselves in over the course of the next several days. We will settle into Hanoi with a traditional welcome dinner. Accommodation: La Siesta Hotel Trendy
Day 2 | Hanoi: After a delicious breakfast buffet, spend your first morning in Hanoi exploring the city on a guided tour that takes you to all the cultural, historical, and local spots around the city. Visit Ho Chi MInh's house and the lotus-shaped One Pillar Pagoda. Spend your afternoon exploring the elegant boulevards in the Old Quarter of the Vietnamese capital, trying delicious Vietnamese delicacies, and exploring UNESCO World Heritage Sights such as the ancient Temple of Literature and the mystical Hoan Kiem Lake. Day 3 | Hanoi: Today will be one of the highlights of your trip as you visit Halong Bay, cruising around the thousands of limestone islands that make up one of the most spectacular sceneries in the world! After a delicious breakfast you will be transferred from your hotel through a beautiful & pleasant farmland landscape to reach Halong Bay (drive time of 3-4 hours). You will board your boat (a traditional Vietnamese Junk) and set off on your cruise. Here you will have the opportunity to hop on a bamboo boat and visit the floating houses and small rowing boats that make up these floating villages. Speak with locals, try their foods, and learn about how they live life on the water. Spend the night aboard, so you can witness both sunset and sunrise on this magical body of water. Day 4 | Hanoi to Ho Chi Minh: In the morning have the opportunity to cruise through the misty bay, immersing yourself in a sunset Thai Chi session on the boat, and even explore traditional floating villages en route home. After this experience you will dock at the pier, and continue onwards to Hanoi to catch your afternoon flights onwards to your next destination. In the afternoon we will continue our journey onwards with a flight to Ho Chi Minh, in the heart of the Mekong Delta. When we arrive in the Ho Chi Minh City, we will check into our hotel and then proceed to orient ourselves with the city, visiting the night markets, trying new foods, and spending free time in the city. We will end our evening with the famous Night Market Food Tour in the Central Market and an authentic Vietnamese dinner. Accommodation: Silverland Yen Hotel & Spa
Day 5 | Ho Chi Minh: Enjoy breakfast at your hotel, meet your guide, and travel to the countryside to tour the Cu Chi Tunnels, an important battle site during the Vietnam War. Spend your morning in the countryside before returning to the city to enjoy lunch and a tour of Ho Chi Minh. Visit the War Remnants Museum, Quan Am Pagoda, and the surrounding neighborhoods & Markets. Return to your hotel for dinner and a relaxing evening. Accommodation: Silverland Yen Hotel & Spa
Day 6 | Ho Chi Minh: Dine on delicious breakfast and set out on our private bus for the Mekong Delta, one of Vietnam’s two main rice bowls. We will pass through lands comprised of low-lying rice paddies and rivers that are bordered by dense mangroves and palms. Boarding a longtail boat, we will pass through the Mekong Delta and Ben Tre to explore fishing villages and the four islands of Dragon, Unicorn, Turtle, and Phoenix. We will cruise along Vam, Xep, a small canal with many little village houses dotted along its sides and glimpse the daily life of the local villagers and join them for lunch and a hands-on cooking class. During our ride, our guide will explain the agriculture of the region and how it is incorporated into the local Vietnamese cuisine. We will finish our boat tour with a visit to the bustling Cai Rang floating market, the largest floating market in Southeast Asia. We will drive back to Saigon after the market, and enjoy dinner in the beautiful capital city. Accommodation: Silverland Yen Hotel & Spa
Day 7 | Ho Chi Minh: After a delicious breakfast, we will check out of our hotel & continue to the airport to catch our international flights back home.
Optional 4-Day Extension to Angkor Wat, Cambodia
Day 7: Fly to charming Siem Reap, the town nearest to the breathtaking ruins of Angkor Wat and Angkor Thom. We will be greeted at the airport upon arrival, passing by beautiful jungle, rural villages, and farmlands on the way to our hotel. Check into your hotel and spend your early evening visiting the Bayon Temple and Elephant and Leper King Terraces. Return to your hotel for a traditional welcome dinner and relaxing evening. Day 8: Today we will embark on an adventure to the largest religious monument in the world and one of the most important archaeological sites in Southeast Asia, Angkor Wat. We will board our private van after nice morning breakfast and proceed to the entrance of the Angkor Wat Fortress, watching the sunrise behind the temple. We will spend the morning with our local guide exploring the temples and monuments that make up Angkor Wat, and take an afternoon visit to the ruins of Ta Prohm Temple. We will learn about the historical, religious, and cultural implication of our surroundings while having the opportunity to climb the monuments, talk with local Monks, and watch the sunset across the reflecting pools. Day 9: After breakfast, our adventure resumes once again. Our day will commence with a visit to a local family, where we will learn about the herbs and vegetables grown at most Khmer households and used in daily cooking. Our visit to each family’s home is an opportunity to learn about food preparation in a Khmer home and see how the traditional shopping and cooking is done. Ourguide will tell us about food customs, superstitions, and beliefs. A gift of rice is provided to the family as a thanks for their participation. Following our family visits we will return to the school to commence cooking. Each participant will have their own cooking station and equipment, and with the guidance and training of culinary experts will create several authentic Cambodian dishes. Day 10: After having incredible experience we will continue onwards to Bangkok to stay a few additional days in Thailand or catch our international flight back home.
